Thank you so much for posting this great recipe! It came out perfect. I tried using the Cuisinart to pulse the dough but later realized you don’t need to do this at all – was a mess to clean up. I used silicone cupcake liners in a cupcake tin, and these were so delicious. Just pressed down with my fingers and added jam from Costco and did the rest as you say. Coming hot out of the oven, they were delicious!! My son said we should try putting peanut butter and jam inside next time. Our family is addicted to the Costco raspberry crumble, and now I am excited to make these at home and avoid the preservatives.

Hi Larry, I have not tried freezing these cookies but I don’t see why not. I would suggest freezing them unstacked on a baking sheet before storing in a zip lock bag. Also placing parchment paper between the cookies should help prevent the cookies with their sticky filling from clumping together in the freezer. Please let me know how they turn out!
