A Super Charged Pesto

This Kale Walnut Pesto (vegan) comes with extra benefits. I love to add “unicorn” powders to my pestos. It is such a simple way to add a few extra nutrients. And by “unicorn” powders I mean these so called superfood powders. So far I have experimented with Spirulina and Chlorella Powder, as well as Maca Powder for my cakes.

This time it’s: Spirulina

Spirulina was the first superfood I heard of. And by that time it was quite exotic and I really didn’t know where to buy it, nor what it was. That has changed. Now you can get Spirulina without any problems in any organic, or health store.

Spirulina is one of the oldest life forms on Earth. In fact, this blue-green microalgae is partly responsible for producing the oxygen in the planet’s atmosphere that billions of years ago allowed the planet’s originating life forms to develop. Spirulina is the world’s first superfood, and one of the most nutrient-rich foods on Earth.

Or, if you really can’t find it, I can highly recommend the products and “bursts” from the company Organic Burst. I buy all my superfood powders from them as they source directly (as opposed to through a wholesaler or reseller!) and they do also support small ethical producers or cooperatives of small-scale growers and harvesters. The benefits of Spirulina

Spirulina has between 55 and 70% protein (more than beef, chicken, and soybeans), 9 essential and 10 non-essential amino acids, as well as high levels of gamma-linolenic acid (GLA), beta-carotene, linoleic acid, arachidonic acid, vitamin B12, iron, calcium, phosphorus, nucleic acids RNA & DNA, chlorophyll, and phycocyanin, a pigment-protein complex that is found only in blue-green algae.

These B vitamins support your nervous system and help you to maintain a balanced psychological state, boost your immune system, improves ability to concentrate and is a perfect pre- or post-workout snack. It provides a near-instantaneous boost to one’s energy, while helping to improve endurance and reduce fatigue. The list goes on and on…

How can I use this Kale Walnut Pesto?

This totally vegan Kale Walnut Pesto with Spirulina can be used in many ways. Toss your freshly cooked pasta in it. Or drizzle it over oven-roasted veggies. And my favourite way is to use it in a Pesto “Zopf” Bread.  This makes a great starter with a glass of wine for a nice menu for guests or your loved ones.

  1. Put all ingredients in a food processor and mix until you get a crumbly, pesto-like consistency. If it's too dry, just add more oil.
Recipe Notes

You can use the pesto straight away for your pasta, veggies or bread filling, or you can transfer it to an air-tight container and keep in the fridge. It stays fresh at least one week without any problem.
